Chicken Roll Ups

Ingredients
- 4 Boneless & skinless chicken breasts, pounded thin
- 8 Slices bacon
- Cream cheese
- Garlic powder
- Parsley
- Chives

Preparation
Spread a layer of cream cheese on the inside of the chicken breast. Season to taste with: garlic, parsley and chives. Roll up, starting with the smallest end. Wrap 2 slices of bacon around the rolled chicken breast. Bake 30-40 minutes in a 325 degree oven or until done. Broil last 5 minutes to brown bacon.

Chicken with Onion and Celery

Ingredients
- 1 Chicken breast
- 1 Cup finely chopped celery
- 2 Onions cut into circular pieces
- 1 Cup shredded salad cheese
- ½ Cup chicken consommé

Preparation

Cook chicken breast in a frying pan, add consommé, onion, celery, 1 cup water. Put the lid on and turn chicken constantly. Serve adding cheese.

Roast Chicken with Almonds

Ingredients
- 10 Chicken breast halves
- 1 Package slivered almonds
- 1 Can cream of mushroom soup
- 1 Can cream of chicken soup
- ¼ to ½ c. Dry white wine, or water or other liquid
- Parmesan cheese
- Salt and pepper

Preparation
Spread chicken in very lightly greased baking dish. Cover with 2/3 of the almonds. Mix soups with wine. Pour over chicken and almonds. Sprinkle Parmesan cheese on top and then sprinkle remaining almonds over. Bake at 350 degrees for 2 hours.

Marinated Chicken Wings

Ingredients
- 2 dozens chicken wings
- 5 Ounces bottle soy sauce
- 2 Tablespoons brown sugar
- 1 Tablespoon Dijon mustard
- ½ Teaspoon garlic powder

Preparation

Mix soy sauce, brown sugar, Dijon mustard and garlic powder. Cut chicken wings in half. Marinate in remaining mixture for 1/2 hour. Bake at 350 degrees for 1 hour or until marinate is thick. Turn once. May be frozen in marinade. Bake after defrosting.

Ajiaco

Ingredients
- 10 Cups water
- 2 Pounds yellow potatoes
- 2 Pounds potatoes
- 3 Pounds chicken breasts
- 4 Corns
- 1 Carrot
- 4 crushed garlic cloves-
- Coriander
- Arracacha (optional)
- Caper
- Cream
- Cumin
- Salt and Pepper to taste

Preparation

Cook chicken adding 7 cups water, carrot cut into slices, chopped onion, salt, sliced corns. Cook until chicken is soft. Remove from cooking and add 3 cups water, arracachas, and potatoes and keep cooking until soup gets the desirable consistency. Add cumin and keep cooking for some minutes, then add coriander. At serving time add cream and capers.

Celery and Bacon Dip

Ingredients
- 1 Cup cream cheese
- 2 Tablespoons chopped celery
- 1 Little can cream
- 1 Cup fried and chopped bacons
- 3 Tablespoons chopped scallion

Preparation
Mix all the ingredients. Chill at least for 30 minutes

Pie Spaghetti Bake

Ingredients
- ½ Cup bread crumbs
- ½ Cup chopped onion
- ½ Cup milk
- 1 Pound ground beef
- 2 Cups cooked spaghetti
- 1 Beaten egg
- 1 Cup spaghetti sauce
- 1 Cup shredded mozzarella cheese

Preparation
Combine beef, bread crumbs, onion, salt, pepper and salt in a mixing bowl. Press mixture into bottom and up the sides of a pie plate. Place on a baking sheet. Bake at 359 degrees for 25 minutes. Drain off fat. Leave oven on since you will be baking your pie again once it is filled. Mix spaghetti with beaten egg until noodles are covered. Pour into baked shell. Top with sauce and cheese. Return to baking sheet. Bake again for 10 minutes at 350 degrees. Remove from oven and let stand for 5 minutes. Cut pie into wedges with spatula to serve.

Vinaigrette

Ingredients
- ¾ Cup vinegar
- 2 Tablespoons olive oil
- 2 chopped onions
- 2 Lemon juices
- Salt, pepper and sugar to taste

Preparation
Mix onion, vinegar, salt, pepper, sugar, olive oil and lemon juices

Sunny Honey Granola

Ingredients
- 2 Cups rolled oats
- ½ Cup slivered almonds
- ½ Cup sunflower seeds
- ½ Cup coconut
- ½ Cup honey
- ½ Cup oil
- ¼ Cup raisins
- Non-stick vegetable spray

Preparation
Mix oats, almonds, sunflowers seeds and coconut in a mixing bowl. Stir honey and oil together in a separate bowl and then combine whit oat mixture. Spread out on a sprayed baking sheet and bake at 300 degrees for 20 to 30 minutes, or until golden. Pour into a clean bowl and stir in raisins.

Berry Smoothies

ngredients
- ¾ Cup blueberries
- ¾ Cup raspberries
- 1-1/4 Cup vanilla yogurt
- ¼ Cup milk
- ½ Teaspoon vanilla extract

Preparation
Combine all ingredients in a blender. Blend until smooth. Pour into glasses to serve.

Fondue

Ingredients
- 1 Cup chocolate chips
- 4 Tablespoons milk
- Pineapple, pear and apple slices
- Brownie and angel food cake cubes
- Marshmallows

Preparation
Combine chocolate chips and milk in a microwave-safe bowl. Cook in microwave for one minute on high. Stir, then microwave for another 30 seconds. Skewer fruit, cake or marshmallows on the pretzel sticks and serve.

Salad with peaches

Ingredients
1 Can peaches
1 Pound lettuce
1 Can peas
Vinaigrette

Preparation
Place lettuce leaves in a dish, then, add on them peaches cut by the middle and stuffed with peas. Stir Vinaigrette into salad.

Peas and Pig Rice

Ingredients
- ½ Pound butter
- 2 Crushed garlic heads
- 4 Cups water
- 2 Pounds rice
- 1 Pound peas
- Salt and pepper to taste

Preparation

Cut pig into pieces, Fry until golden brown, add peas, garlic, salt and pepper and keep frying for a while. Add 4 cups water and keep cooking until soft. Apart, fry rice with butter until golden and add mixture. Keep cooking until rice is dried
.

Pizza

Ingredients
- 15 Ounces can tomato sauce
- 2 Teaspoons dried oregano
- 2 - ½ cups Biscuit baking mix
- 1 env active dry yeast
- 2 cups shredded mozzarella cheese
- ¼ cup dried minced onion
- 2/3 cup hot water (120 to 130 degrees)
- Toppings of your choice

Preparation

Stir tomato sauce, onion, oregano and garlic powder in a mixing bowl. Combine baking mix and yeast in a large mixing bowl. Add water gradually and stir with a spoon until thoroughly blended. Turn out onto a clean, well floured surface and knead. Allow dough to rest for 5 minutes and then divide into equal parts. Shape one part into a ball and place in the center of a baking sheet. Roll out ¼ inch thick and pinch the edges to make a crust around them. Top with sauce mixture and then add cheese and toppings. Bake at 425 degrees about 15 minutes. Repeat with other dough balls.

Hot and Spicy Chicken Wings

Ingredients
- 5 Pounds bag chicken wings
- 1 Bottle hot sauce
- 1-2 Sticks butter

Preparation
Fry chicken wings until golden brown and drain on paper towel. Mix hot sauce and melted butter and pour into deep pan or crock pot. Add chicken wings to sauce and heat thoroughly.

Chicken Wings

Ingredients
- 36 chicken wings
- 5 Ounces bottle soy sauce
- 1 Teaspoon Dijon mustard
- 4 Tablespoon brown sugar
- ½ Teaspoon garlic powder

Preparation
Rinse chicken wings and pat dry. Mix soy sauce, mustard, brown sugar and garlic powder together. Marinate wings in mixture overnight (or about 6 hours). Bake wings on cookie sheet for about 1 hour at 375 degrees. Baste wings occasionally with sauce.

Macaroni with Chicken

Ingredients
- 1 Onion
- 1 Garlic clove
- 1 Tablespoon flour
- 1 Egg
- 1 Tablespoon tomato sauce
- 1 Pinch of marjoram
- 1 Pound chicken
- 1 Tablespoon caper
- 1 Package macaronis

Preparation
Cook macaronis with salt. In a frying pan melt butter and cook onion and garlic for about 12 minutes. Add flour and mix them. Combine egg, tomato sauce, milk and add salt and pepper. Cook mixture. Cut chicken into small pieces and add it into mixture. Add macaronis and capers too.

Lemon Spaghetti

Ingredients
- ½ Pound cooked spaghettis
- ¼ Teaspoon shredded lemon peel
- 2 Tablespoon lemon juice
- 1 Big can cream
- 2 Tablespoons chopped onion
- 2 Tablespoons chopped parsley
- 1 Crushed garlic clove
- 4 Tablespoons butter
- Salt and pepper to taste
- Cheese

Preparation
In a frying pan melt butter and cook over medium heat onion, garlic clove, and parsley, add cream, salt, pepper and shredded lemon peel. Keep cooking for some minutes and stir well using a wooden spoon. If you wish mixture is smoother add water. Heat spaghettis with butter, add previous sauce. Serve food sprinkling shredded cheese.

Garlic Pasta

Ingredients
- 1 Garlic head
- 1 Cup water
- Olive oil
- Salt

Preparation
Mix all this ingredients in a blender

Macaroni Tart

Ingredients
- 1 Tablespoon tomato
- 2 Tablespoon oil
- 2 Eggs
- 2 Peeled and chopped tomatoes
- 2 Tablespoon butter
- 3 Tablespoon shredded cheese
- ¼ Cup shredded onion
- ½ Pound macaroni
- ½ Cup milk
- ¼ Cup bread crumbs
- ½ Cup corn starch
- Cumin, salt and pepper

Preparation

Boil macaronis, drain them and wait until they are warm. In a frying pan add oil, melt butter, and cook onion and tomato. Season with salt, pepper and cumin. Wait for 10 minutes. Put frying pan out of fire, add bread crumbs, cheese, milk, corn starch. Stir well. Add macaronis and mix. In a cereal bowl beat eggs, mix beaten eggs with macaronis. Cover a baking sheet with a single layer of butter, place macaronis there and bake them at 660 degrees until golden.

Stuffed Cannellonis

Ingredients
- ¼ Shredded parmesan cheese
- 1 Pound ground beef
- 1 Tablespoon garlic pasta
- Cannelloni pasta
- Onion
- Red pepper
- Butter
- Salt, pepper and cumin to taste

Preparation
Stuff canellonis with ground beef. Cover a baking dish with a layer of butter, add cannelloni there and sprinkle shredded parmesan cheese. Bake them until cheese is melted.

Carbonera Spaghetti

Ingredients
- ½ Pound spaghetti
- 4 Oz bacon
- 1 Tablespoon butter
- 2 Eggs
- 1 Tablespoon parsley
-. Parmesan cheese
- Salt and pepper to taste

Preparation

Cut bacons into squared pieces; cook them in a frying pan and add butter until they are golden and crispy. Meanwhile beat eggs with parsley and pepper. Cook spaghettis, drain them and place them again into the pan and heat them over low heat. Add bacon, oil, salt, beaten eggs and stir well using a wooden spoon. When spaghettis are totally dried add shredded parmesan cheese above them.

Spaghetti with chicken

Ingredients
- 1 Tablespoon garlic pasta
- 2 Tablespoons oil
- 1 Pound spaghetti
- 1 Can tomato sauce
- 3 Chicken breasts, boiled and cut
- 3 Cups milk
- 1 Little goblet wine
- Salt and pepper to taste

Preparation

Cook spaghettis and add garlic pasta and oil, then drain. Prepare the sauce dissolving tomato sauce in milk and boil it. Add chicken, wine, salt and pepper. Mix spaghettis and the sauce.

Bolognese Spaghetti

Ingredients
- 1 Tablespoon butter
- 1 Onion
- 1 Bottle spaghetti sauce
- 1 Cup vinegar
- 1 Tablespoon oil
- 1 Carrot, peeled
- 2 Cups ground beef consommé
- ½ Pound spaghetti
- ½ Pound ground beef
- Garlic
- Marjoram
- Laurel
- Salt and pepper to taste


Preparation
Mix butter, oil, shredded onion and carrot and ground beef, cook over medium heat, move frequently the mixture. Add the remaining seasonings, spaghetti sauce, and vinegar. Keep cooking for 20 minutes. Mix boiled spaghettis and the mixture. Add shredded cheese if you wish.

Garlic Raviolis

Ingredients
- 1 Pound raviolis
- 1 Tablespoon oil
- 2 Tablespoons garlic pasta
- 5 Tablespoons butter
- 1 Can cream of milk
- 3 Tablespoons shredded yellow cheese
- 1 Cup white cheese

- 1 Garlic clove
- Salt, pepper and cumin to taste

Preparation
Boil raviolis with 1 tablespoon oil and garlic pasta for 15 minutes, and then drain water. In a frying pan melt butter and cook garlic clove over medium heat for 3 minutes. In another recipient mix cream of milk, yellow cheese, cumin, salt and pepper. Place raviolis into frying pan and add the other tablespoon garlic pasta. Mix them. Add butter in a baking dish, place raviolis and cover them with cream of milk and cheese sauce, then sprinkle them with white cheese and bake at 660 degrees for 5 minutes.

Pig loin with plums

Ingredients
- 3 Pounds pig loin without fat.
- 3 Tablespoons lemon juice.
- 3 Tablespoons chopped onion.
- 2 Slices pineapple mixed in a blender with one cup water( don’t use a colander)
- 2 Cups plums soaked in ½ hot water since the previous day.
- 2 Cups meat consommé.
- 2 Tablespoons corn starch.
- 4 Tablespoons oil.
- ½ Tablespoon thyme.
- Mustard and salt to taste.

Preparation
One day before, mix onion, thyme, lemon juice and salt. Keep it in the refrigerator until tomorrow. The next, sprinkle loin with salt and add mustard. Then, add the mixture. Place loin in a big frying pan with oil and cook it over medium heat until golden. Meanwhile drain plums but don’t throw away the water, cut them into small pieces, place them into the water again, add two tablespoons sugar and cook them over low heat for 10 minutes, put them out of the fire and keep them there.

Once loin is golden, scrape the superficial part and throw it away, place it into a baking dish, add pineapple juice and bake at 660 degrees for 30 minutes. Keep soaking loin occasionally with pineapple juice and the liquid that it releases by action of heat. When is lacking 15 minutes for finishing the baking, add plum sauce, dissolve corn starch in a little of water and add it too. Cut loin into thin slices pieces and wait the 15 remaining minutes to finish the baking.

Chicken Fricassee

Ingredients
- ¼ Cup butter
- ¼ Cup onion

- 6 Chicken breasts
- 3 Garlic cloves
- 1 Pound tomato
- 1 Can cream
- 1 Can peas
- 1 Little can caper
- 1 Goblet white wine1 cup white sauce
- Salt and pepper to taste
- Parsley
- Mushrooms


Preparation
Brown chicken breast in a dutch oven and add butter. Mix tomato, garlic cloves, and onion. Add the mixture into chickens that are browning and add mushrooms, goblet white wine, capers, salt, pepper and parsley, next put the lid on the dutch oven. Keep cooking over medium heat during 10 minutes.Put dutch oven out of the fire, take off the lid, add cream and white sauce.

Bittersweet Chicken

Ingredients
- 1 Tablespoon black sauce
- ¼ Cup white vinegar
- Tomato sauce to taste
- 3 Cups shredded onion
- 1 Cup sugar
- Salt and pepper to taste
- Chicken

Preparation
Cut chicken into pieces as you wish, sprinkle them with salt and add black sauce. Fry the onion in a frying pan, add sugar, vinegar and tomato sauce. Stir and then, wait for 3 to 5 minutes. Add the chicken and wait for 10 minutes more. Bake at 350 degrees for 20 minutes

Chicken Bites

Ingredients
- 2 Boneless, skinless chicken breasts
- ½ Cup bread crumbs
- ½ Cup milk
- 2 Tablespoons melted butter
- Salt and pepper to taste

Preparation
Cut chicken breasts into small pieces. Sprinkle them with salt and pepper. Pour bread crumbs into a cereal bowl and milk into other one. Deep chicken chunks into milk, then roll in crumbs to coat completely. Trickle butter over the chicken bites.Bake at 350 degrees for 15 to 20 minutes or until no longer pink in the middle or fry until chicken bites are golden.

Ham & Cheese Rolls

Ingredients
- 3 to 4 teaspoons mustard
- 3 to 4 slice of ham
- ¼ cup shredded Cheddar cheese
- 4 refrigerated crescent rolls

Preparation
Cut ham into small pieces. Unroll crescent rolls into a baking sheet. Spoon mustard onto the rolls. Sprinkle each roll with one tablespoon ham and one tablespoon cheese. Roll up the crescent rolls. Bake at 350 degrees for 11 to 13 minutes or until rolls are golden

Watermelon Lemonade

Ingredients
- 6 cups watermelon, cubed and seeded
- 1 cup of water
- ½ cup sugar
- ½ cup lemon juice

Preparation
Combine watermelon and water in the blender. Blend until smooth. Pour through a strainer into pitcher. Push the liquid with a rubber spatula when draining slows
down. Stir sugar and lemon juice into the strained mixture until sugar dissolves. Chill about 30 minutes or serve over ice.
